Chef Bill here.  We are supplying recipes for you to make and eat.  This is not “food as art” or any snobby bullshit like that.  I would encourage you to get one scale with a resolution of 0.1 gram and a range of 2 kgs and another with a resolution of 1.0 gram and a range of 5 kgs.  I use an My Weigh 2600 and an Escali respectively.  It is not always necessary to weigh everything, but not a bad idea when you are cooking something for the first time or would like some degree of repeatability in what you are making.  You need a good mixer and a good blender.  Spend a little extra money on them at the outset.  They’ll last a long time and serve you well.  Remember, clean as you go.

Water

Wash all vegetables

Add all ingredients except oil and vinegar into a non reactive bowl

Toss well so dry ingredients are evenly dispersed with vegetables

Let stand 30 minutes

Add oil and vinegar and mix well

Let stand 30 minutes

Cover well and put in refrigerator overnight  or up to 2 - 3 days

Eat with chips or baguettes or whatever you like

In a bowl beat water, egg, egg white and vinegar, set aside

In another bowl, mix the flour and salt together

Cut shortening into flour/salt with two butter knives

Pour liquid into center of dry ingredients

Mix with a fork and until dough is stiff

Knead dough until flour is incorporated and dough is smooth

Refrigerate for at least an hour, but up to 5 or 6 hours

Makes 10 or 12 6 or 7 inch empanadas

 

Filling can be whatever you like

Last time I used Onion, Jalapeno pepper, red pepper, shredded beef, chimmichurra,

Saute vegetables, add meat and cheese

Roll empanadas into 6 or 7 inch cirlces

Add filling

Fold shells over and seal with a fork that has been dipped in water

Bake at 400 degrees F for about 20 minutes

Instructions

Measure dry ingredient into mixer bowl

Measure liquids into a separate bowl and mix by hand

Run mixer on low speed

Add liquids

Add flour if necessary until dough mass cleans side of bowl

Mix for ~ 10 minutes

Form into 600 g loaves, put in pan sprayed with canola oil

Let rise until dough is 30mm to 50mm over the top of pans

This is usually about an hour

Bake in oven preheated to 350 degrees for 25 - 30 mins

Internal temperature 185 degF - very moist

Note:  This is a very slack dough.  Slice to ~ 9 mm

This is a very easy bread to make.  There is no reason to buy bread in a store and many not to.  It can be frozen for several months
